  1. Poha needs to be soaked in water and excess water is removed by draining and pressing before frying.
  2. Poha Chivda, also known as Pohe or Pohay is originally a Maharashtian dish mostly consumed in breakfast or during tea time snacks. Poha is soaked in water and is lightly fried along with onions, mustard, cumin, curry leaves (kadi- patta).
  3. A typical recipe for pohe is following: 
    • Wash pohe under running water and drain excess water. Let Pohe stand for ten to fifteen minutes. In the mean time, heat oil in a non-stick pan, splutter a spoon of mustard seeds followed by cumin seeds and saute for about a minute.
    • Add a pinch of asafoetida (hing), green chillies, curry leaves (kadi-patta), chopped onions and saute till the onion is golden brown. Add potato, carrot green peas or any other vegetables of your choice. Sprinkle a little water and cover with a lid and cook till potatoes are soft.
    • Add pohe, and turmeric powder, peanuts, cashew- nuts, almonds, raisins, salt and sugar and toss well. Cover the pan again and let it cook additional 5 minutes. Serve Pohe hot after garnishing with chopped coriander leaves.
