Paniyaram is a popular savoury breakfast dish in Southern India but can also be made sweet, similar in shape as Dutch Poffertjes. Also a picnic and a popular tiffin recipe, Paniyaram is served with coconut chutney, peanut chutney, kaara chutney, mint chutney or idli podi.

Made up of the steamed lentils and rice batter, the dish is known as Kuzhi paniyaram in Tamil, Paddu/GuLiyappa/Yeriyappa in Kannada, and Gunta Ponganalu in Telugu. Added with the local spices and the chopped vegetables, this dish is also known as paddu, appe, guliappa, gulittu, yeriyappa, gundponglu, ponganalu.

Kuzhi paniyaram is very easy to make, just add finely chopped onion, and add spices in the left over Idli batter for masala version of paniyaram. 

A typical Paniyaram recipe consists of 

  • Idli Batter- 2 cups
  • Chopped Onion - a medium size finely chopped 
  • Green Chilli- 1
  • Ginger - 1/2 inch
  • Asafoetida - 1 pinch
  • Crushed black pepper - optional
  • Red Chilli powder- 1/2 tsp
  • Curry Leaves - Chopped, 2 tsp
  • Grated Coconut- 1/2 cup
Method
  • In a bowl, mix all the ingredients together. Pour a spoon of batter into Paniyaram mould with 3/4 full.
  • Allow the batter to cook for 2-3 minutes on low to medium flame
  • Turn the baked Paniyaram with teh help of provided skewer, allowing the other side crisp and golden brown
  • Serve hot with coconut chutney or sambar.
