Easy homemade Matka Kulfi recipe that you can't resist having every day

Let's add a touch of India to your dessert repertoire with this delightful Matka Kulfi recipe that features the exotic flavors of Kesar or Alphonso Mango pulp. Delight in the creamy goodness of this traditional Indian treat made right in your own kitchen.

Ingredients
  • 2 cups full-fat milk
  • 1 cup sweetened condensed milk
  • 1 cup heavy cream
  • 1 cup mango pulp (you can also use frozen puree or fresh mangoes blended into a smooth puree)
  • 1/2 tsp cardamom powder
  • 1-2 tbsp chopped pistachios and almonds (optional)

Instructions:

  1. In a heavy-bottomed saucepan, heat the milk on medium heat until it comes to a boil.
  2. Reduce the heat to low and simmer the milk, stirring occasionally, for 45-50 minutes until it thickens and reduces to half the quantity. Make sure to scrape the sides of the pan to avoid burning.
  • Add the sweetened condensed milk, heavy cream, cardamom powder, and fresh mango pulp to the saucepan. Mix well until everything is combined.
  • Cook the mixture on low heat for another 5-10 minutes, stirring continuously until the mixture becomes thicker and creamier.
  • Allow the mixture to cool to room temperature.
  • Pour the mango kulfi mixture into popsicle molds or bowls and cover them with foil. Freeze them for 6-8 hours or overnight.
  • Once the Mango Kulfi is frozen, remove it from the molds and serve it on plates, garnished with pistachios and almonds if desired.
